Cauliflower rice is essentially nothing more than a low-carb, substitute for traditional white rice. It can be eaten raw, but it's usually lightly cooked to soften it up and create a texture more akin to traditional rice.
Like most vegetable cauliflower (vegetable belonging to cruciferous family) is packed with essential nutrients like antioxidants, fiber, vitamins and minerals like vitamin C that provide health benefits and reduce risk of several diseases.
HOW TO MAKE CAULIRICE AT HOME:
Caulirice is very easy to make at home with these simple steps:
Wash and dry the cauliflower head
Cut the cauliflower into chunks, including the cores.
Place into a food processor.
Pulse until the cauliflower resembles the texture of rice. Work in batches, if necessary, and be careful not to over-process or it’ll get mushy. If you don’t have a food processor, you can grate the cauliflower with a box grater.
CAULIRICE RECIPE:
A. GARLIC HERB CAULIFLOWER RICE
INGREDIENTS
100gm home made or store-bought cauliflower rice
1/2 tablespoons olive oil
2 cloves garlic, minced
1/4 teaspoon fine sea salt
Freshly ground black pepper, to taste
3/4 cup chopped fresh herbs like parsley, dill, cilantro, and basil
1 tablespoon lemon juice or more to taste
METHOD
heat the pan and add the olive oil. , Add the garlic. and cook until fragrant,
Add the cauliflower rice, salt, and a few grinds of black pepper. Cook, stirring every once and a while, until the cauliflower rice is crisp-tender and starts to turn light brown in places, 7 to 10 minutes.
Take the pan off of the heat, and then stir in the fresh herbs, lemon juice,
Taste then adjust with additional salt, pepper or lemon juice.
